SPICY SCRAMBLED TOFU
Brimming with flavour this is a quick, tasty and fulfilling breakfast that will warm you up for the rest your day. You can of course use eggs if you don’t have tofu, just make sure to stir through the whisked eggs into the frying pan rigorously to ensure they don’t set too quickly at end up as more of a spiced-up omelette… although I guess that would be pretty tasty too!
Ingredients:
1x pack of silken tofu, left to drain on kitchen paper
1 tsp cumin seeds
1 large onion, diced finely
1 birds eye red chilli, chopped
2 cloves of garlic, chopped
Half inch of ginger, chopped
1/2 tsp ground turmeric
1 large ripe tomato, diced finely
Salt to taste
Small bunch of fresh coriander
1/2 tsp garam masala
1/2 tsp Nigella seeds to sprinkle on top (optional)
A few julienned pieces of ginger for garnish (optional)
Method:
1- Blitz together the garlic, ginger and red chilli with a drizzle of water, then pour into a bowl and mix in the turmeric to form a spice paste
2- Add some oil to a pan and lightly roast the cumin seeds, then throw in the onions and allow to brown
3- Once the onions are soft and browned, add the spice paste and cook through for a few minutes on a low/medium heat
4- Add the tomatoes and salt, stir through
5- Carefully take the tofu and crumble it with your hands into the pan, combine well,
6- Add the garam masala and coriander, then allow to cook for a few minutes
Sprinkle with nigella seeds and ginger, and serve with a slice of sourdough toast
