SPICED FRESH GINGER & DATE MINI-CAKES
This is one of those really simple recipes that you can just whip up one morning and have as a delicious healthy mini-cake snack for days – if they last that long! They are also perfect with a cuppa anytime of day.
Ingredients:
1 1/2 cups wholemeal flour (or any flour of your choice)
1 tsp bicarbonate soda
1 tsp baking powder
Pinch of salt
1 1/2 tsp freshly ground spices – mix of cinnamon, cloves, cardamom
1/2 cup almond oil (or coconut oil if you prefer)
2 eggs
1 cup almond milk (or your choice of milk)
1/2 cup date paste (refer to my recipe on the blog)
1 tsp vanilla extract
50g freshly grated ginger
Method:
1- Preheat oven to 160C and grease baking equipment of your choice – one which is suitable to hold the dough!
2- Mix the dry ingredients in one bowl
3- Lightly whisk the wet ingredients in another bowl, starting with the eggs and oil
4- Fold the wet ingredients into the dry, adding the grated ginger last, and mix well
5- Pour the batter into your baking pan and bake for 20-25mins
6- Optional: lightly dust with some ground cinnamon and coconut sugar, or icing sugar
Best served warm, and even with a dollop of ice-cream or cardamom infused fresh cream for added pleasure and a touch of naughtiness!
