MUTTAR PANEER FRITTERS | PEAS AND PANEER FRITTERS

Muttar Paneer (Peas and paneer) is an identifiable combination of ingredients in Northern Indian cuisine; however, rather than using these delicious ingredients in its common ‘curried’ form I have used them here to make these crispy and healthy fritters – great for breakfast, lunch or as a snack.

Ingredients:

1 block of Paneer (~250g), crumbled

1 zucchini, grated and well drained

2 spring onions, finely sliced

Large handful of peas

Small handful of finely chopped fresh coriander

1 tsp ground cumin

1 tsp ground coriander

1/4 tsp ground chilli (or 1 fresh green chilli, chopped)

1/2 tsp garam masala

Good pinch of freshly ground black pepper and salt

2 eggs, lightly whisked

75g corn flour

Method:

1- Mix together all the ingredients

2- Heat a couple of tablespoons of oil in a large frying

3- Spoon individual dollops of the mixture into the frying pan, shaping into fritters as you go, and in as many batches as required

4- Allow to cook through and turn golden brown on each side

Best served hot with a crunchy tomato salad, dipped into a fresh cucumber raita, or with a smear of butter as an on the go snack.
